Best Brisket Yet

A few friends and I went to the Chris Cagle show last night. I figured, whats the best meal before a country show, BBQ! So I went to the meat market on Friday after work and bought another CAB brisket flat. They are pricey but so worth it! The Egg was hotter than I thought when I put it on and the IT of the meat shot up to 151* in just under 2 hours. I thought I screwed it up. I lowered the temp on the egg a bit and it went pretty smooth after that. It was about 7.5 pounds and took about 8 hours to cook. Eveyone who came over was amazed at how good this brisket was and I have to say it was pretty damn good. So moist and the flavor was perfect. I'm not trying to toot my own horn here but I was so excited about how it came out.

Now that you are getting into the brisket world a small suggestion: http://www.amazon.com/Victorinox-12-Inch-Granton-Slicing-Fibrox/dp/B0000CFDB9/ref=sr_1_1?ie=UTF8&qid=1400415874&sr=8-1&keywords=Victorinox+meat+slicing+knife ... Also Chicago Cutlery makes one just as good at half the price but has wood handle.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

@Mickey I have been wanting to get a nice slicer for a little while now but evertime I have a few extra bucks laying around something comes up. That is my next BBQ purchase though

Once more nice cook. Look at the Chicago Cutlery knife just like it. They last a life time.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

I have the Messermeister version. Any carving knife will do, there are no bones and it's not especially challenging to carve if you know the muscle fiber directions.
