Does anyone know of a book that is available with brine and marinade receipes?

    Charred and Scruffed has sections on board sauces, brines, marinating sauces and a bunch of similar stuff.  It's mostly a grilling recipe book, but it has a lot of what you're looking for.  It's a great book, IMO.

    this is one of my favorite books it has a lot of techniques in it that really builds the flavor layers.

    Sauces Rubs and Marinades is about as good as it gets if you are looking for marinades, rubs, glazes, bastes and mops. It's a well written and easy to follow text. I both use and highly recommend it my friend.
