I've tried both with and without a water pan and have settled on a drip pan (aluminum foil liner) is what I prefer. I've never had a problem with a BGE meal dryin' out... and I like the smoke n' smell of the drippin's ...

@Skiddymarker-Yeah but that's when the poor cow is submerged >-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
