To Refrigerate or Not post cook?

OK...you wise old Veterans....

Got three 10 lbs butts on the XLBGE.....should be done ready to wrap around 6-8 PM this evening. They will hibernate in the cooler for a couple of hours and then plan to pull for serving next day around 3:00PM. Would you refrigerate after the pull or let them rest to room temperate prior to reheating tomorrow afternoon?

    Don't bother with the cooler. Just pull them when they're finished. Bag up the pulled meat with some of it's juices and cool rapidly. An ice water bath works well to cool it. Then put it in the fridge until it's reheat time.

    I prefer to reheat pulled pork in a aluminum steam pan. I will add a hefty dose of Carolina vinegar sauce or the sauce of choice and cover with the form fitted lid that comes with steam pan. I like 225-250 for temp. Just heat until warm and then stir good to lightly coat all meat and no one will ever suspect that you are serving warmed up meat. It's the best method I have found. There Are other ways but this is the best in my opinion.
