Not bad. Never seen one in person, until now. This steak is growing on me, and I'm not a huge Filet guy.

What a pretty piece of meat! I am anxious to see it plated. Please let us know how it cooks. I am just wondering if having the bone attached would make it difficult to cook evenly? My experience with filets is that they cook rather fast.

Will do! 

I don't think it will be that difficult to assure even doneness. I'm going to sear it 3-sided, instead of just searing on either side. 

Something like sear 3-minutes face, stand the steak on the bone & sear 3-minutes on the bone, sear 3-minutes face. Check for doneness, and if needed further cooking, to allow to "roast" on the bone, standing up, so all sides get hit with even heat.

Me too! High expectations, and high hopes, and like previously mentioned, I'm not a huge Filet fan. However, this is one steak I am definitely looking forward to!

Never heard of bone in fillet. Looks great. I love a good fillet.
