Filet Mignon!
Cut this from a whole prime beef tenderloin I got at Sam's. It was one of the best steaks I have ever eaten, SWMBO concurred.

Looks great. How did you prepare / cook it?

reverse sear. indirect 250 till 120 internal, placed in foil wrap while egg got up to 550-600 then seared in cast iron skillet for a min per side and edges. Was about 140 after resting, just a bit higher than my target but still amazing. thanksIn Manchester, TNVol For Life!

Looks great. What did you do with the rest of the 'loin? I've had decent luck with Sams meat, while terrible at walmart.Slumming it in Aiken, SC.

I cut it into fillets, foodsavered and froze. I plan to do a chateaubriand roast with the head and maybe grind the chain and ends into hamburger, not sure yet.In Manchester, TNVol For Life!
