Question about brisket
My brisket drop about 5 degrees from166 to 161. It is now hanging around 163. Is this normal? My digiQ is set at 250. Everything seems ok.

Totally normal, You are in the stall and the temp drop is evaporative cooling as a result of the juices getting squeezed out. Sit tight, this is where the magic happens. Should take many hours before it starts to rise again. Good luck and enjoy your brisket.Keepin' It Weird in The ATX FBTX
