small deboned chicken - reverse 'lo mai gai' (pic heavy)

spur of the moment cook ... got a really small chicken and wanted to learn Pepin's deboning technique ... didn't have the usual stuffing so I scavenged the pantry/fridge and found these ingredients that are more suitable for sticky rice chicken wrapped in lotus leaf, instead I decided to wrap everything in chicken, hence reverse 'lo mai gai'   http://en.wikipedia.org/wiki/Lo_mai_gai

precooked stuffing except water chestnut

deboning a tiny 3.5lb chicken was a real challenge!

decided to cook it (in the kitchen box btw, hence OT) breast side down, seam up, 375 till IT 170
