Cottage Bacon Question

I've used the Ruhlman technique a few times with great success to make regular bacon. Has anyone tried this recipe on a pork butt to make cottage bacon. I'm assuming tjat the curing time would vary due to the difference in thickness. Any advice would be appreciated.

    I have a few cure recipes i will share with you if no one else responds. It will be around 8:00pm before i get home and can post them. I have not tried Ruhlmans myself so i cant comment on that one.

    I did a few but prefer belly or loin. The butt we sliced very thin and fried.

  • I thought you guys called it buckboard bacon. We call it cottage roll.
