Beef Chili on BGE

I am looking to cook some chili on BGE with my new 5 quart cast iron dutch oven. This is my first time so I am looking for some ideas on Temp, direct/indirect, wood chips and duration.

I got a DO on Christmas and first thing, I made chili too. I used the plate setter with no grate legs up and set the DO on top. I cooked mine at 225 for 5 hrs. with chunks of apple with no lid.
