Cooking at 250-275 direct on raised grid.The tops are fine, but the bone side and the tips are burnt, What am I doing wrong?

Ribs should be cooked indirect using either a placesetter or ceramic stone between the fire and meat.

You can cook direct, but the ribs need to be on edge, and rotated frequently. It is a reasonable method for doing untrimmed spares, where about half of one edge is almost all bone, and there's little to be lost from charring.
