ATK salt and corn starch rub a winner

I would assume the phrase "Americas Test Kitchen" is anathema around here, but I do have to say their rub of equal parts cornstarch and salt on a steak is a real winner. Did it two nights in a row and the results were great.

    If you sear first, the only thing that will survive on steak is minerals, in other words salt. The corn starch will dry the surface, speeding the browning Maillard reaction.
    The other cook is chicken skin, benefiting from a starch or baking powder. 

    Steak two nights in a row - promotion? inheritance? lottery?
