19 Pound turkey Wouldn't fit Using Platesetter, pan, Vertical Stand

Hi,

I was looking forward to smoking a turkey this TG using the vertical stand in my large BGE.  Imagine my surprise when I tried to close the egg with the turkey in the stand.  It started touching with the BGW 2 inches from closing.  Fortunately I had a V Rack, so I went that route.

Question:  How in the heck am I supposed to use the vertical stand to smoke a turkey in the BGE?  I saw a half size fire ring, which would let the platesetter be positioned lower in the BGE.  Is this the only answer?

Also, I made the mistake of leaving the thermometer in place while shutting the lid, which bent the probe.  Then, when I tried to straighten it, it broke!!!!

The turkey was ready after about six hours of cooking.  I found a digital meat thermometer and was able to finally adjust to temperature.  I found that the BGE was over 300 degrees.  I like slow cooking between 250-275 degrees.

  • I tried to do Little Steven's invertabird on my XL this morning with a 14lber.  It will not work either.  The birds butt plugged the upper vent when closed.  Maybe next time a smaller bird on the chicken vertical roasting rack will work.  My turkey came out fine, but I want to try the upside down version sometime soon.  Of course we have a lot of turkey to eat before that happens.

    If your using the sittin' turkey (like beer can chicken) you need to put your drip pan directly on the plate setter and your turkey right in the drip pan. This year I cooked a smaller one (15 lbs) but last year I did a 18 pounder, it was about an inch from the top.

     

    Came out great again this year...

    You might need to cut a few inches of the backbone out to get it further down the stand. I get the top of the stand out the back end and lift it and drop it on a cutting board on the counter a few times.

  • How about getting a half fire ring?  I tried the turkey in the vertical stand sitting in the pan, which was on washers on the plate setter on the fire ring.  I  bought the vertical stands at the same store that sells eggs and have never used it before.  

    After cooking the turkey, I was reading about these metal grates that allow better airflow.  I had some similar looking mesh and cut it to fit, but after cooking some burgers, the mesh started sagging from the heat, so I guess I need to buy a replacement.  It was significantly easier to get the temperature up than with the ceramic grate that came with the egg.  

    How does the Hi Que grate compare with others?  I saw a stainless mesh one on E Bay for half the price of the Hi Que.  The more money I can keep in my wallet the better I like it.

    As for the half fire ring, why not just take your fire ring out and put plate setter on top of the fire box? I did that with my small and got 5hrs of 325* cooking out of so you could go prolly 8-9hrs in the Large I would guess.

    That will work, the last one I did I used the spider. The other thing you can do is (and I really, really hesitate to say this here) is spread  the legs way out until they release from the sockets.

  • I did my first one like that Gary. It looks better off the BGE turkey stand. Fit's a lot easier with the fryer rack though.

    I had posted earlier a "fiasco" thread.  After all of the things that wanted to keep me from doing the invertabird with the cover and Egg both being frozen down etc.  I was glad to just get it cooking in order to be done on time.  I will be doing this again with a chicken for sure and after this learning curve I'm going to try it on the next turkey.  The LS invertabird just makes sense in so many ways.
