Andouille and Chicken Paella

Used some of the andouille sausage I made last weekend for last night's paella; tasted really tasted good. It's getting dark enough here by 6:00pm or so that I can't take pics on the egg (will be getting dark even earlier with the time change and the approach of winter). We were so ready to eat when I brought the paella in that I forgot to snap a pic until after we'd dug into it.
Going to make a sausage jambalaya for dinner tonight. They'll be lots of good paella and jambalaya leftovers for lunch this week!

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

OK, you have to come back to Mother Texas in March and visit a bunch of us in Salado. Wow that looks good.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

@Mickey, thanks! I'm going to give that some thought. I'd already penciled in the Georgia Mtn. Eggfest for May but, I think I've got a west coast family wedding to attend that weekend.
