First Spatchcock Chicken (with pictures)

Appears this type of chicken is very popular so I decided to give it a turn.  

Cooked two whole chickens (right a 12lbs) and took around 1.25 hrs @ roughly 375°.  Injected both with apple juice.  

One I rubbed with Bad Byrons (I mixed some brown sugar in with mine).  

Second chicken I took dijon mustard, fresh garlic, salt, pepper, italian herb (grinder thing from McCormick), butter, olive oil, and onion powder and placed in the microwave to heat the butter up.  Let that sit to form a paste like substance to rub on the chicken.  Did this on the skin and under the skin, everywhere.  

Cooked direct (I need some bricks) per the above.  They turned out great!  Don't have a monitor, yet.  After I got my temp regulated, I set the timer for 45min.  Temped it at 45min at the breast and was about 10° from 165°.  Left it on another 15 min and was dead on.  Brought them in and tented them for around 10min.  Wow, they were juicy!

    Looks good man. If you don't have another way of doing raised direct, getting some bricks is the cheapest way to do it. I guess I have seen some people use beer/soda cans but to each his own.  Always good to see a fellow tarheel on the forum. Cautiously optimistic for the upcoming season as long as Hariston doesn't decide to go smoke weed in someone else's fancy car again.

    Thanks!  I want to get a couple fire bricks to raise the cooking grid up.  The chicken turned out pretty good at standard height though. 

    I hope P.J has learned his lesson so far.  Or at least until he is drafted.  I hate to see a kid do some dumb act and mess his future up over crazy decisions.
