Beef jerky

Good day folks,

Tried some beef jerky this last week along with some 'coconut charcoal' and it was pretty good.

First I empty the egg

Once done, I pilled up the charcoal.

Once the eeg settle to 175, the meat went in.

2 hrs in:

After just over 4hrs, I took the jerky out:

They turn out very good but still too moist IMO. I would have left them in for another 1-2 hrs but it was getting late and I was ready for bed.

Lesson learn: Good food takes time to cook. Don't rush it!!!

    Looks good!

After 2-3 hours in the egg, when the dripping has stopped and jerky has picked up smoke, I finish them in the comfort of kitchen using dehydrator.

Looks good.  Can you provide some details on the meat used and its preparation?
