I will be doing my first spatchock chicken tonight (2 birds using the upper and lower grids). Hoping for crispy skin I followed the advice to let birds sit in the fridge overnight. One post said the birds will "look funky" the next day. Well, they do in fact look funky and I just wanted to confirm this what I should be seeing with the skin taking on an odd color..

Yep that's right on it as the others mentioned. Are you going to go direct or indirect for the cook? I like to cook mine breast down the last 30 minutes direct to get the skin nice and crispy. I hope it turns out well. It's become my favorite way to do chicken
