I will be doing my first spatchock chicken tonight (2 birds using the upper and lower grids). Hoping for crispy skin I followed the advice to let birds sit in the fridge overnight. One post said the birds will "look funky" the next day. Well, they do in fact look funky and I just wanted to confirm this what I should be seeing with the skin taking on an odd color..
