Alaska fishing
Having great time in Alaska but missing my Egg. Even fresh caught salmon is only "okay" on the gas grill here at the lodge.

With salmon simple is best and a fillet is a great way to cook salmon. Leave the skin on and season the flesh with seasoning salt, Lawry's is good, and garlic powder. Lay on the grill at 325 degrees with alder chips for smoke and close cover for 15-20 minutes depending on how thick the fillet is. Cut into serving size on the grill with a spatula by cutting through fish down to the skin and then slip spatula between the fish and skin to plate. If you have a dog it will love the skin, once it cools, so everyone gets to enjoy the salmon.

Standard here is brown sugar and some soy sauce. 300-325 take it to 135-140.

At a minimum the Buerre Blanc sauce is worth it, but be careful not to break the sauce. Don't make it until you're ready to put it on the fish.
