Chopped Pork Cakes ala Squeal Bar-B-Q

Trying to find new ways to use leftover pulled pork and ran across this on an Episode of Unique Eats from Squeal Bar-B-Q in New Orleans.  Did a standard pork butt yesterday.  Mixed 2 cups chopped pork, 4oz. cream cheese, sautéed onions, green peppers and garlic (1/4 cup, 1/4 cup and one clove - will probably double next time).  Topped with a mixture of sour cream and siracha, then a homemade tomatillo sauce.  Turned out great!

Looks great to me. Do you bread them and pan fry like a crab cake? That is full throttle!

Yup, deep fried.  Coated with flour, dipped in milk then panko.  Deep fried at 350 to golden brown.

 

And Caliking, I think I'll name them Duck Taped Pork Cakes
