Brisket Quesadillas...

Miss Wife and I went out for dinner tonight, but I whipped these up afterwards with the leftover brisket I smoked up the weekend before last. Figured it will make for great work lunches. The brisket was reheated with some enchilada sauce. Then tossed in a flour tortilla with some Monterey Jack. Have some homemade Pico de Gallo in the fridge to go with. :)

    Looks good! I made a quesadilla with my leftovers from tacos al pastor for lunch today. A brisket one sounds even better!

  • Made pulled pork fajitas using leftover butt I had in the freezer. Threw in some peppers, onions, and Penzy's Rojo Taco sauce. Y'all need to try that sauce if you have a Penzy's close, or order it online. It's great!
