Brisket Quesadillas...

Miss Wife and I went out for dinner tonight, but I whipped these up afterwards with the leftover brisket I smoked up the weekend before last. Figured it will make for great work lunches. The brisket was reheated with some enchilada sauce. Then tossed in a flour tortilla with some Monterey Jack. Have some homemade Pico de Gallo in the fridge to go with. :)
