Twice Baked Tex-Mex Sweet Potatoes

Coat with olive oil and sea salt.

Bake at 400 indirect for about 50 min. 

While potatoes are baking, mix goodies, season heavily, and cook on med high heat. 

Split patatoes and hollow out.

Mix goodies and potato filling and re-fill the skins.

Cover with cheddar and put back in egg for a few min. 

Serve with a dollop of sour cream.

    Looks real good my friend. I couldnt get away with the olives my wife would find them and them and then act like a 3 year old and throw them on the floor. Not worth it.

    But when she is away I will be trying this one.

    We bake them then wrap with hdaf. Slice and squeeze open. Pulled pork, then the other good stuff. Pork with a heavy hickory taste is the best.
    Green egg, dead animal and alcohol. The "Boro".. TN

    Travis, Nice take on the usual twice backed recipe. Just about anything goes with twice bakers, kinda like the classic line "tastes like chicken". 

    We always mix the sour cream right in with the mashed spuds, irish style, the olives are a must have garnish on the top.
