Twice Baked Tex-Mex Sweet Potatoes

Options
Coat with olive oil and sea salt.

Bake at 400 indirect for about 50 min. 

While potatoes are baking, mix goodies, season heavily, and cook on med high heat. 

Split patatoes and hollow out.

Mix goodies and potato filling and re-fill the skins.

Cover with cheddar and put back in egg for a few min. 

Serve with a dollop of sour cream.
