1st Brisket question
Going to attempt my first brisket. I have company coming at 5 pm tomorrow. I plan to coat with mustard and rub. Planning to cook it around 250°. What time should I throw it on? Anything I am missing?

Sorry. It is a 9 lb. flat.

count on 2 hrs per lb at 250 dome. You can hold it wrapped in foil and towels in a cooler if you get done a little early. Will hold for 4-5 hours very easily that wayKeepin' It Weird in The ATX FBTX
