Turbo Ribs

I have made ribs a few times since getting the egg and they have been very good, but not great.  The best ribs I have done have been the ones attched to the bone in pork roasts that I have done.  Since I do those at 350 indirect, I decided to give some ribs a try at the same temp.  Did two racks of BB, with a combo of pecan rub and Butt Rub.  They were the best ribs I have done yet.  Very moist, great bark and flavor with perfect consistancy.  I also really enjoyed the fact they took 2 hrs vs. 4-5.

I worked my way from 250 to 275 to 300. I don't see any reason at all to go back down. You do have to be more aware of when they finish.
  • I have been doing turbo BB's and Spares for quite some time now.  I see no reason to go back to the 4-6 hours after getting the results I do with 350 degree turbo style.

Give it a shot. I wish I could say I've got 5 or more hours to cook all he time, but it doesn't seem to work out that way.

Would the turbo style work with beef back ribs at the same temperatures?

Only one way to find out.  I would guess that it would work well.  350 is about the temp that you do a prime rib at so it should work well to roast the prime rib bones.

I did turbo ribs indirect at 350 for 2 hours last friday and they were way overdone, very dry unfortunately. Next time I stick with 1.5 hour or check them more regularly. Literally wasted 3 slabs.

Must have been a ribs weekend. I did three slabs of babybacks myself. One with Butt Rub, one with DP Redeye, and one with Ole Rays and DP. Sauced half of them with Blues Hog.

  • Reminds my of a client who had just bought an Egg, he swore his 45 minute ribs on the gasser were the best....because they were quick.

If I may suggest a pairing with a turbo rib dinner:

  • So turbo BB ribs are 350 degrees for 2 hours?
