Got 2 lil piggy racks with dizzy on going. Have also prepped chicken thighs with stuffed basil, goat cheese, red bell peppers and poblano peppers fire roasted and bacon wrapped waiting.
5 cheese texas toast will be the starch. I guess peppers and basil leaf are veggies, right?

Getting better, used a Tenn Whiskey rub on the bottom two, and the top two used John Henry's pecan rub. Both not bad. Got a little more bark there was tuns of smoke since I put in three big chunks of hickory and some apple and jack Daniels wood chips. Under the bark was real pink but ribs were done the meat part was cooked and almost fall off the bone.

I did 4 hours at around 275 from the dome thermometer. Used straight Rub, then last 20 mins I sprayed straight apple juice, with a little crown royal mixture. Might even cook a little longer next time. And use a rub with a little more sugar to get more bark. This was only my second try at ribs.

What is ur setup? I have an Adj. Rig and it does not look the same as mine

@mike I put the standard grate on the fire ring and then put the adj. rig on that. On the standard grate I put the ceramic stone & on top of that I put the drip pan. I got the idea from Tom @ ceramicgrillstore. But I am still way new at all this so might try different set ups.
