    Nice job on the creative fit...no worries as the shrinkage takes hold:)  But now you can work on the bigger boat-and if you start with the suggestion of a boat, a BGE will pale in comparison.  Enjoy the journey and the end result.

  • I did a 17lber on my large last week and it touched on both sides. If you need to make it fit, cut off the thinnest part of the flat until you can get it in there. That part dries out fastest anyway.

    Did you foil it at all or just let it go? I'm hoping to just leave it alone and maybe mop it if it looks dry. This is my first full brisket. All I've been able to find around here were flats until a BBQ buddy told me of a local butcher selling packer cuts. Also when it shrinks should I pull out the v rack or should I leave it on top of it the whole cook?

    Don't foil it. I leave mine on the v-Rack the whole cook but I have a drip pan under it

    Ok good. I wrapped the plate setter in foil but didn't think of a drip pan. It's sizzling nicely at 250. I figured it would take too long at 225. Hoping to have it ready for lunch tomorrow, at least the thin part anyways

    about 16 hrs- It went fast. I always use a v-rack inside a 9.5x13.5" drip pan. Sometimes I put that setup on the grid but for larger briskets (like the one above) they are too big to fit on the grid (too high up in the dome). In that case, I put a spacer on the platesetter and the drip pan/v-rack on that (like this):

    I did a 9lb brisket and had to tie it ina circle, lol

    Came out awesome. I cut the point off at 12 hrs and threw that back on the egg for 3 more hrs. Everyone loved the lunch. The brisket, au gratin tots and fresh corn. No more flat cuts for me, this was way more juicy without half the fuss. Some cool pics of the egg working her butt off for us:

    Looks great man.  I've got a medium and appreciate the thread.  Now I know what's the biggest brisky I can get on it.  I may play it safe with a 15# tops. 

    The smoke coming out the gasket area, does that mean the gasket is not tight?

    It means the dome won't shut with that Brisk-A-Potamus shoved in there :))

    Lol. Gasket has been shot now for a long time now. It's on my to do list. A fifteen pounder should fit easily and you may even be able to leave your thermometer in unlike me!

    You'll have a little more room if you put the v-rack on the platesetter instead of the grid. It's wider down there and you can leave the thermo in if you want. I still cant believe you fit such a beast in there.

    I'm copying your setup next time, just didn't want to rearrange it once I had it going. I just can't stop being impressed by this cooker, every time I opened the lid my GF and would crack up laughing.

  • If they do, make sure all your bbq buddies go in and get one over a few weeks and then they will start keeping a few around
