Pineapple planked Duck Breast with Maple syrup glaze

Howdy...
Tried something special today - Duck Breast cooked on a pineapple plank.
I seasoned the Duck breast with my PigWing rub on the meat side and cut the skin crosswise and rubbed some sea salt into the cuts.
Then i cut the skin off the pineapple in big pieces and grilled the pineapple and duck on their meat sides over direct meadium heat.
Then i put the duck onto the pineapple and cooked with the plate setter and 450-500 F until the duck was medium. I glazed the skin with maple syrup a couple of minutes before it was done.
Sides were a pineapple lollipop marinated in rum and then coated with brown sugar, pepper flakes and cinnamon and a nice smoked beer from a small brewery in south germany.
Good enough to eat !







Thsi should also work with other poultry, fish or pork.

Brilliant and beautiful! Cook a lot of duck and will give this a try. Looks like domesticated duck, yes? Did you brine it?Plated pic is MONEY!

Didnt brine it, not really neccessary for the ducks we get over here.
