Rib Eyes New Thermopen - What Temp

Stoater
Posts: 292
Hi Guys,
I just got my new thermapen today and want to test it on some rib eyes that are around 1.5 inches thick, what temp should I take them off for med rare, 130 and the tent? I am so used to cooking by time and sight. Plan on searing them at 700 and then taking them off dropping the egg temp and then throwing back on at 450, does this sound doable.
Thanks for any input, should be home in 20 Mins.
Cheers

Check out the TRex method as documented by the Naked Wiz Publishing Empire:

This is the exact method you are describing in detail - it works great. I use it myself but I pull at closer to 140 degrees. You can still go by feel to correlate which exact temperature.
