Just got the Egg last week, so far we have tried pork shoulder, spatchcock chicken, and last night ABTs.  I decided I wanted to smoke them, I stuffed them with extra sharp cheddar, topped with ancho, chipotle powder and wrapped with pepper bacon.  I smoked them for about 2 hours with a dome temp of 250, they turned out great.

Budgeezer that is just to much work for me. Direct at 400, takes about 45 min

Mickey, excellent point but being a new egg owner I wanted to give smoking them a try.  Next time I'll give your method a shot.

Nice what kind of peppers do you use for these things.

Stoater, I tried to find the biggest jalapenos that I could, to make coring them a little easier.  Cutting them in half lenth wise looks to be a lot easier, but I had just received the pepper rack as a gift and wanted to put it to use.

I'm with Mic, cut in half is so easy. I've also been adding some mushrooms and little smokies lately. Hard to stop eating them.

I started using a grapefruit spoon to clean out the pepper. That tip works very well for seeds and ribs.

Congratulations on getting the egg. You will love it. Keep grilling in that baby, get the inside good and black.  ;)
