Leftover spatch- not too shabby

Was talking with eggbertsdad about chicken pasta earlier and it made me hungry. Had some leftover spatch chicken so it went something like this here:

Spatch chicken over whole wheat Bowie pasta. Organic golden tomatoes and spinach from the farmer's market, sundries tomatoes, feta, and red wine vinaigrette. Pretty good for answer lunch (I work at home so I get to do these things) today is obviously a little slow round here .

minus all the typos (dang iPhone) it turned out pretty good and super easy to make (pasta took 10 minutes, everything else 2 minutes)

Good idea. I always have trouble thinking of what to do with leftover spatch.

My leftover spatch don't last long. Leg and thigh usually and gets warmed and eaten the next day.

After seeing this thread, I wanted to make a similar dish, but instead was overruled and used my leftover spatch to go on top of pasta with vodka sauce.

Good idea. I always have trouble thinking of what to do with leftover spatch.

I try to leave it in the store.
