    Mikey - that's looks really good and it looks like enough to feed an army. How many pounds was the loin?
    3.?lb cut in the middle and folded over and flattened out(pounded).

    Goat cheese, feta cheese, jalapenos (candied), jalapeno pickles.

    Cooked with pecan wood chunks.

    that a tenderloin or a loin?

    looks long for a tenderloin, and narrow for a loin.

    that a tenderloin or a loin?

    looks long for a tenderloin, and narrow for a loin. 
    That is a loin cut to open like a book and them pounded down and rolled long to cook faster.
