Thick Ribeyes

I am still new....3rd time sorry. What internal temp is it best to cook thick...1.5 to 2 inch Ribeyes to get a medium plus or med well. Thanks a lot . Justin

    Medium well will be around 150. Pull them off at around 145 and rest. Temp will rise a bit while resting. Could rise by 5 or 10 °

  • Try cooking them indirect o an internal temp of 135-140, then sear them over the hot coals.

    I pulled these 2" thick Cowboy Ribeyes at 125* and rested for med rare.
