Did another one tonight, they are tasty.
Pounded out flat
Stuffed with
Put on some of JJ's rub
Cooked at 350 raised till it reached 140 internal
Very tasty

    Bear, it looks great and you have inspired me. Can you fill me in on how you butterflied it out? Just a real deep cut lengthwise and then stretch it out as far as it will go?

    Ya you just slice it abought halfway threw then pound it out to a consistant thickness. It really isn't hard to do.
