Planked Salmon

The pork chops were Tuesday night. The fish monger comes on Thursday, so fresh salmon on the menu. I splurged for a pound of lump crab meat $$$, but was able to vac-seal 3 more meals worth and freeze.
I received some "raw" cedar planks from my Maine-hooker Secret Elf and had yet to use them, so here goes......
The Raws:
Soaked the planks for about 40 minutes. Hvy coating of DP Raging River on the salmon and allowed to melt for 40-45 min. I add a light coating of Shakin The Tree just before the grill. Large egg at 400* and stable. Planks on for 4 minutes, then flipped and added a light coating of EVOO, then the salmon.
When the salmon was almost done, added a CI skillet with butter.
Nice smoke:

Plated with fresh broccoli from the Earthboxes and sliced sweet taters coated in Pineapple Head:

I haven't used a plank since I've had my Egg (5 years). The only other time I had tried planked salmon was on a gas grill. I burned up the plank and couldn't tell any smoke flavor in the fish.
This had a good smell while cooking and added a subtle taste to the fish ! -

This guy gets his fish from New Orleans Fish House (and maybe one other place in NOLA). I think the salmon is farm-raised off Newfoundland. At least the water there is probably cleaner than SE Asia-raised fish. :ohmy:
The Fresh Market has wild-caught salmon most weeks. -

Crab was only sauted in butter until most of the water had cooked out. I wanted to add some green onions, but we had none and didn't feel like going to the store in the 5 pm traffic. :ohmy: It turned out pretty good anyway !

True! Easy to take for granted. We moved away for awhile and missed the fresh Alaska Salmon that is often available here. Cedar plank salmon was my second cook!

Scott, after 5 years, I essentially have very little to no gasket on mine. It still goes out quickly, saving lump, and barely leaks at the gasket with heavy smoke and a low-n-slow cook.
If this new one goes, you have options:
1) Stay with no gasket
2) Replace again
3) Do a search here and see the various options for non-felt replacement gaskets (Nomex, Rutland, and Frank from Houma recently used a liquid gasket). -

Gotta figure out how to clean the black char off - sanding will probably work. -

Easy cook, but have to watch closely to not over cook. When the white albumin starts to ooze out on top, it's done (temp checks show it to be about 120* internal).
There is a great recipe for Maple/butter glazed salmon on the Dizzy Pig web site. -

I buy crab at Costco, $14 for a lb. of super lump. Is it way more there where you are?Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
