Beli: That Mahi sounds and looks amazing! I do something very similar with the Pernod and tomato, except with shrimp and tarragon. I'll have to give it a try with fish! Nice dish!

Sorry Rebecca I was working from my iPhone earlier & hadn't realized your question about the corn, This time I used an american Brand from HEB "Steamable Sweet Corn on The Cob, we love it & have it pretty often. Normally the corn we get here is not as sweet, it's a bit harder & tastes better grilled in my opinion

TKS Michelle, your shrimp sound delicious, have you tried them over a bed of Jamón Serrano?? (Dry cured spanish ham) the combination of flavours of the pernod, tomato & taragon is fantastic

, but I keep the best memories from the school, the friends & the oklahomans in general. Managed to speak on the phone to one of the Augustinian priests a while back but he was in his 90's & didn't remember a thing about me :(. Will try to make it to the next fest -
