Cooked indirect at 320 until we reached an IT of 110° and then we put a nice sear on it. Pulled and rested. Sorry no sliced pics...they went fast. LOL0 · -

I went indirect at 340 until reaching a internal temp of 120, pulled off and foiled while going direct on the Egg. Raised dome temp to 500 and reversed seared on all sides. Tasty stuff.-1 · -
