It's all been covered already. A Thermapen is #1, and for me the Platesetter Woo from Ceramic Grill Store (PSWoo) is my second favorite. You want to take out the heavy (and/or hot) platesetter? Just pick up the handles and lift off. Wear gloves if it's hot. I just set it down on the concrete patio floor, but you have to know where you're going to put it down.
It was my favorite too for many years, till it disappeared. I have a Maytag dishwasher that still works after 23 years, and a Maytag French door refrigerator that keeps produce fresh for close to 2 weeks and dairy even longer. It's a "Miracle" brand name.
I've probably put on 4 or 5 Rutland gaskets on the bottom only over the years. Haven't missed a meal yet, even if a little smoke leaks out here and there. Not that I've noticed that, but my motto is "If you don't mind, it doesn't matter."
