Stuffed my XL

Did one spatch for dinner, 3 to freeze for use in other dishes. Ran out of room for the veggies, so I had to improvise!
Pulled first two chicks, so veggies got promoted:
Finally, flipped the flip ring to get the veggies down lower for the final sear:
Plated (spatch chicken never looks as good as it tastes:
Earlier in the day, the three oldest participated in a duathalon (run, bike, run):
Oldest daughter came in first overall for girls (was up to 12 yo):
And her 10 yo sister was just a step behind, so came in second for girls overall:
Was a fun day!

Spatchcock is always good - especially when smoked over cherry. Love the deep red color it gives. -

I do love my XL. I bought it used, and the base has since cracked, so I will be replacing it one of these days... I use the medium for high heat and single items, and the XL for low and slow and complete meals. Great combo! -
Sometimes it seems we stay way too busy, but in only 6 short years my oldest will be going off to college (hopefully)

Looks great, I use left over chicken for alot of things. Great idea cooking 4 at a time. Only have a large {for now} Congrats on the kids.
