Did one spatch for dinner, 3 to freeze for use in other dishes. Ran out of room for the veggies, so I had to improvise!

Pulled first two chicks, so veggies got promoted:

Finally, flipped the flip ring to get the veggies down lower for the final sear:

Plated (spatch chicken never looks as good as it tastes:

Earlier in the day, the three oldest participated in a duathalon (run, bike, run):

Oldest daughter came in first overall for girls (was up to 12 yo):

And her 10 yo sister was just a step behind, so came in second for girls overall:

Was a fun day!

Congratulations on your family's acomplishments. And what a beautiful family it is. The chicken looks delish.
  • Richard looks as if you and the kids had a great day. :)

It's nice to have all that real estate on the XLG.

Hey Richard you must be proud of them, congratulations....Never seen an XL put to such good use

Thanks! They had fun. At that age there is no training - just show up and participate.

Spatchcock is always good - especially when smoked over cherry. Love the deep red color it gives.

Thanks for the kind words. :)

I do love my XL. I bought it used, and the base has since cracked, so I will be replacing it one of these days... I use the medium for high heat and single items, and the XL for low and slow and complete meals. Great combo!

Sometimes it seems we stay way too busy, but in only 6 short years my oldest will be going off to college (hopefully)

I enjoy all your posts. Really great garden you had!

Congrats on your son (army) and daughter (pregnant)! You done good!

Thanks, but I've seen many great XL cooks on here. It's nice too see all the great ideas.

Those habanero ribs had me drooling, as do most of your cooks. Enjoys all the family celebrations you post! ;)
