Boiled & Smoked Peanuts

A road side BBQer down in Lake Wales, FL introduced me to boiled peanuts. He described the process as boiling green peanuts for 24hours in a mix of salt, cajun spices, sauces, etc. Then he puts the nuts in a pot inside his smoker and slow smokes all day while out on the road. They are incredible.
Was through GA yesterday and picked up what the lady called "green" peanuts so I am assuming they must be. Got my mixture together and have it in the boil now. Just curious if you actually leave it at a rolling boil for 24 hours or boil for "X" hours and then simmer? Any other advice/suggestions would be much appreciated!!!

Interesting question. I have no idea so I decided to google.
Sounds like the entire process is 2 or so hours.
The first hit seems to answer your questions and is pretty interesting. If I can find some green (raw) peanuts I want to give this a try.

I agree Kent, I've boiled lots of peanuts even roasted ones and they've never taken over 4 hours. -RP

Also, around here Walmart has raw peanuts in the produce section. -RP

They've been on for about 3.5 hours. Still Don't seem cooked like I get them in FL. Flavor is good. I put plenty of Cajun spices and sauce in there. Not to mention salt. I'm going to keep tasting until right. I might should slow down on the Jose so that I can actually taste them.

Sounds like you're on track. I just went down to Walmart and picked up a couple bags of raw peanuts. The instructions on the bag say to boil 3 hours then start tasting for doneness. My recollection is that they take about 4 hours. -RP

after cooking, let them soak for a while, they will pick up the seasoning. the longer the soak, the more spicy they will be.

Kent, they are in one pound bags on a rack in the produce section along with roasted peanuts. -RP
