The Fall trout fishing has started in Wyoming.... and I'm doing my best to bring some to the table.
It's great smoked.
I think I'm eating them almost as fast as I'm catching them...

I love to eat trout, but enjoy catching them even more. Unfortunately I haven't had the pleasure in a few years.

Oooh, tinfoil trout got my mouth watering.
Ages ago I cold smoked some rainbow trout and that sure was good. Need to look up how to do that again.

I actually start my baked trout open faced and put a couple of green onions inside for moisture (that particular one is only seasoned with lemon pepper). Once the flesh reaches 130° I remove from the oven and close the foil for about 10 minutes. This same set-up can be used in the Egg. Oh yeah, I don't turn them. I like them this way 'cause they are flavorful and very heart smart.
Anyways, as you know the foiling helps the meat separate from the bones easier (and the bones are why a lot of folks don't like trout).

hehehe that bottom trout has seen better days.
I like the lemon and have done the boy scout cook method but have not tried the onion.
Do you have any close by lakes or do you head to the streams?

There are several reservoirs along the North Platte river (which runs right through town). The closest is 25 miles away, my favorite is called Pathfinder and is 45 miles out. It's a good ice fishing lake too.Happy Trails~thirdeye~Barbecue is not rocket surgery -

Yes. Pathfinder is over a million acre feet, and has 120 miles of shoreline. It is mostly a sportsman's lake verses some of the smaller ones that are more for recreation.Happy Trails~thirdeye~Barbecue is not rocket surgery
