Eggfest in Minnesota

I had fun attending yesterday’s Eggfest in Minnesota. There were around 20 eggs serving food to the attendees. I attended to get some ideas, and the visit was successful.
My top foods:
1. a snack akin to a jalapeno popper. Had some creme cheese bacon (not sure what esle).
2. A fig wrapped in prosciutto.
3. The tenderest pork loin I ever tasted. The cook injected it with butter and a commercial rub. I don’t know if it is a fair comparison, but the pulled pork I tried at other tables was drier than that pork loin, and the pulled pork wasn’t injected. I plan to buy an injector.
4. Fellow egger, EggspertMN, cooked up two wonderful and colorful paella dishes in his paella pan. One was a chicken dish and the other seafood. I plan to buy a paella pan.
5. a beer brat. The brats were cooked on the grill with indirect heat. For the second phase, they were cooked in a watertight container with onions and a generous amount Newcastle beer.
I didn’t wait for the turkey to be served. It looked tasty but I was the one that was stuffed.

I showed up too late. Picked up one of the BGE's in time, but soo disappointed I missed the chance to BS with all the gurus. Just didn't get our sausage making done in time.
How was the Paella done - direct or indirect heat?
Looking forward to next year already! -
Pretty sure it was direct. He closes off the bottom vent completely, and leaves the top open most of the time while he stirred the mixture and added ingredients. I had never seen the Egg used in this way. I assume the same technique would work for stir fry.
Yea, you missed it, but there will be another one. Meanwhile, there are plenty of people to learn from on this site. It's fun, though, to see people in person, and to taste others' food to see how your own compares. -

Not believing I made the top of your list with such pros there. Rookie effort. We will be better next year. Didn't know what to expect. 1st Eggfest. Now my wife is fired up to wow the place with a few different dishes, although she questioned me when I suggested ABTs. My neighbor said "you want to feed these people, not put them in the hospital."

When we made the BBQ sauce we roasted the garlic (on the egg) and prepped most everything the morning before we left. Fresh raspberries.
The sauce sweetens up the heat. We removed most seeds to not overdo it.
You just made our day.
The jerk chicken the guys next to us (Tracey) was out of this world. Best I ever tasted.
