Grid temp 225 (240 -250 dome temp) and figure about 1 1/2 hrs per pound.
For sliced pork 165 for pulled 190.
I would suggest that you let it rest by wrapping in foil for 45 - 60 minutes.
Also, don't trim the fat.
Cook indirect with plate setter and drip pan.
