Tarragon Chicken Burgers

I wanted to make something healthy, tasty and easy last night so here's what I did.
I took a pound of ground chicken, added some extra virgin olive oil, lemon juice (fresh, not bottled), tarragon, salt & pepper. Formed into 4 patties, let them chill really good for about 6 hours. Cooked direct 350 for 10 min.'s per side. Just make sure the meat reaches an internal temp of 160 degrees.
I usually marinate chicken breast in this mixture but I thought I would give it a try mixed into some ground chicken and it turned out amazingly moist and very tasty. I made some creamy mashed potatoes and lima beans to go along with it.
I make the mashed potatoes fat free by using skim milk and Parkay spray butter. I just take the cap off and pour it in. I use it on everything really, even spray it on my toast in the morning. It doesn't work on popcorn but I found that Pam cooking spray (butter flavor) works great for that. I haven't used real butter in years and don't miss it at all.

I usually take a chicken breast and pound it flat and marinate in that mixture and everyone I maked it for raves about it. If I had to pick between the 2 I'd go with the chicken breast vs. the pattie.

That would probably be pretty good in a sandwich. I'm so jealous of you getting to go out fishing. Those pictures the other day really got me wanting to get down to Islamorada and do some deep sea fishing before the weather gets too hot.

before i bought my camp in maine i used to fish abaco on the flats for bonefish a week or two every year, i really miss that. this is the month, not too hot and the winds not too bad.fukahwee maineyou can lead a fish to water but you can not make him drink it

My brother-in-laws house in right on the water and we used to sit outside and watch them bonefish. That's an odd type of fising. Don't know if I'm much for that.

I used to love my mashed potatoes drownding in butter but with the Parkay spray butter it gives you the butter fix without the butter. Try it sometime.

Anne, That was delicious. I can't wait to get home from the office and see what you have cooked for tonight. You were right, a little lemon juice squeezed on the patties really brought out the Tarragon. I don't think I'm going to Egg anymore, you're way too good at it.

They weren't too bad. I think the grind and the amount of dark meat would be a factor. When I have done them I added butter, which is kinda across purposes.

Those look great! Is that fresh tarragon or dried???
We usually use ground turkey breast, because the ground chicken is almost as high in calories as lean ground beef.
Can you also share the marinade you mentioned with the lemon and terragon, especially measurements???

Next time I'm going to grind my own chicken breast. I was just in a hurry and didn't want to take the time to grind that small of an amount.
I didn't use any measurements but for 1lb of ground chicken in a small bowl I mixed maybe an 1/8 to 1/4 cup of EVOO, a dash of salt and a few good grinds of pepper, the juice of half of a lemon and maybe an 1/8 cup fresh tarragon. You can use dried but use less.
