Ga Nuong Xa, Vietnamese Chicken with Lemongrass

Made Ga Nuong Xa, Vietnamese roasted chicken with lemongrass this evening.
Some ingredients.
Started off making the wet rub: lemongrass, garlic, shallots, red 'bird' or thai chiles, Vieatnamese fish sauce, sugar, and salt.

Placed the wet rub under the skin Monday evening and left the skin dry out in the fridge until today. Roasted indirect with raised grid at 375 dome for one hour.
Served with Evolution and Conumdrum with Nuoc Cham and grilled aspargus drizzled with a bit of sesame oil and given a squirt of lime juice. The rice had: chicken broth, shallots, mushrooms, red thai chiles, red pepper, cilantro, and sambal oelek.
And of course, grilled pineapple with ice cream for dessert.
