Here's 3 suggestions found here and there.
Cook it to 200 internal temp and it will pull just fine.
indirect at 275 degrees, couple of chunks of hickory. Around 3 hours, maybe a little longer if the quarters are huge.
Take off when they are at least 190 internal.
Pulled chicken is very good. I normally cook the thighs (don't often cook legs) at 225-250 degrees for 4-4.5 hours indirect with no flipping, turning.
You definitely can cook much longer and still very comfortably increase the flavor and texture. -
Bob,
Thank you very much - I'll give it a try.

Basically, just season them and cook indirect at 325f until they hit 175-180 internal.
Here's more on doing it with thighs:

and here's one I did with a whole bird:

Chris,
Wow - Thanks - do I roll up the thighs or lay them flat?
also - do I put any bbq sauce on them for the last 30 Minutes?
Tom -
We cook a lot of chicken, mostly grilled or beer can. Haven't tried the pulled variety but will now. Looks great.
