Anybody do Yakitori and/or Yaki-onigiri? I think the magic is in the sauce.
I used to frequent a restaurant in Buckhead (Atlanta) called Yakitori Den-chan, but they closed some years ago and I really miss them. I think it would take a lot of experimentation to come close to their product unless somebody is knowledgable enough to give me a head start
Dennis Lange (the owner of Yakitori Den-Chan) is now one of the partners at 5 Seasons Brewing company. The Yaki-onigiri (grilled rice balls) are actually on his appetizer menu at the Prado location, but I do not get over there that often...
Thanks in advance for any direction or advice.

We got it here. Love it!! I just by the gallon jugs of the sauce. At work we mix teriyaki and soy sauce.Molly

i buy yakitori sauce at the local asian market and prefer this brand
http://www.asianfoodgrocer.com/product/bankansan-yakitori-sauce-7-4oz
most all the recipes posted on the web are nothing but teriyaki sauce [soy sauce, sake, mirin and maybe some sugar]
google yakitori and look around for the recipe that looks most like what you are looking for ..
i do these a lot and they have been popular at fests..
i do direct at 300-325 turn and baste often so the sauce is like a glaze and not burnt,,
i use perdue chicken fingers and korin.com has the largest selection of bamboo skewers i have found and much more reasonable than store bought fancy ones . -
I think there's a yakitori recipe in Raichlen's How to Grill.
Here's a recipe for grilled chicken meatballs with yakitori sauce:
