I finished off (sadly) the beef tenderloin tonight.
I decided to try something new so I took this recipe that I found on BigOven (my fav recipe software/foodie networking site).
Pineapple Beef Marinade
Ingredients
Pineapple juice, 6 ounce can
2 tablespoons Dark brown sugar
3 whole Garlic cloves, minced
1/4 teaspoon Ginger, ground
1/2 teaspoon Garlic powder (I skipped and just increased an extra clove)
1/2 teaspoon Onion powder
1 tablespoon Peanut oil (I used 3/4 T peanut 1/4 T sesame)
1/4 teaspoon White pepper, ground
1/8 teaspoon Cayenne pepper
3 teaspoons Soy sauce
I mixed it all together and marinated the steaks for a few hours (didn't get to marinade overnight as the recipe suggested). I grilled them on the Egg at 550f on a cast iron plate for
2 minutes, flipped
2 minutes, flipped
1 minute, flipped
1 minute, flipped
and then let rest.
It came out perfectly rare for my tastes. And tender? Butter knife tender!
Overall, good flavor. Next time I'd up the heat with the cayenne and ginger. I'll definitely make it again.

Looks great Chris! I love a good pineapple marinade--thanks for posting the recipe too.

That looks fantastic! Next time you might want to try some of the Dizzy Pig "Pineapple Head" rub. I'm going to have to "ping" Nature Boy about this post. He keeps telling me the "Pineapple Head" is meant for fruit. Glad to see someone else using pineapple for beef.

Chris - Excellent looking cook! The filets look perfectly cooked! Nicely done! You should post that recipe in the forum recipe book. Sounds well worth making! Thanks for the post and pics.

Where do you get the Pineapple Head rub from DP? I don't see it on their site. -
I recently had a Korean beef dish that was marinated in fruit to tenderize it. Apparently they prefer kiwifruit as the marinade of choice.
-
wow that's rare.
Moooooooooooooooooooooooooooo -
I've used something very close to this marinade but I add a little bourbon. This works great on pork chops as well. Pineapple has a good bit of acid in it and that helps to tenderize. Looks great!!!!

WOW!! This is for me to try.

Looks great! I'd second the addition of a little bourbon or rum. This is seared on a a pan, not the grid, right?

Well more of a cast iron plate that has raised grids on it.
Here it is after use last year (ugh! Normally my egg is much cleaner inside;) )
