Okay, so yesterday I got my new cast iron grate. So tonight I tried two new things, first cooking on the cast iron grid, and second, T-rex steaks. Haven't done steaks that way before, however, maybe a new fav

Great pictures. The greens that are on top of your steak , did they burn when you do the sear? What is it? Never the less, a great looking meal.

It is freshly chopped parsley

I got the recipe from a cook friend of mine at Ruth's Chris. Comes out fantastic. I did burn a tad tonight, but parsley dosn't hold up tp 1000 degree heat and it still taste unreal!!!!!

I used some cowboy lump tonight, cause I heard it gets real hot. :evil: It sure does!! :silly: I would recommend it to anyone!!

Thanks for the idea. I sear at around 550. Never heard of using parsley but I think I will give it a try. Never want to get in a rut. Gotta love the egg.

What are the advantages of a cast iron grate? Could it be used in place of the original, or is the cast iron grate used only for steaks, etc?

Placed with the narrow side of the bars on top, it makes for some nice grill marks.

Placed with the wide side of the bars on top, it gives better support to burgers, veggies, and such.

There is also a difference in the flavor where the hot iron has put a stronger sear on the meat. This is why some people place the CI grid on with the wide side on top, even for steaks.

I sear directly on the coals. I don't get the pretty grill marks, but I do get a good sear.

Where are CI grates available? Also, doesn't searing steak directly on the coals leave ash on the meat?

I bought mine at the local egg dealer, if you can't find one then you can always call the mothership in ATL and order one.
