I usually just dust w/some red dirt rub and then sear and then on to a dwell until a nice med rare/med....man that ia a good cut of steak.[p]good luck,[p]Jan

HolySmokes,[p]TREX, but be careful because its a thin cut. I like DP's Red Eye Express because its a more robust flavor to match the beefy taste.

HolySmokes,[p]I did some Flat Iron last weekend for the first time, and I would recommend pulling them at 130 deg, 135 max. They're not kidding, it's a thin cut of meet, and almost like a flank steak.[p]You'll enjoy it if you've never had it before; they're surprisingly tasty and tender![p]-Mike[p]

i'm saying even less than that. just do the 90 second per side trex sear at 700 and lay in a bed of vidalia onion and you are good to go!

I wound up with 2 min per side, no photos,
and a 20 min rest. Damn yummy.[p]then I made 'shrooms and had the package ready, then
forgot the damn shrooms and served the meat with the
rest of dinner HAR no-one compained [p]all best, HS
